In a large bowl, mix the corn, eggs, milk, and butter together. Set aside.
In a separate bowl, thoroughly combine the baking powder, salt, pepper, and 1 cup of the flour. Stir the dry ingredients into the corn mixture. If necessary, add just enough additional flour to hold the fritters together.
On a griddle, heat a little oil. Drop 1/2 cup of batter onto the pan. Flatten and shape into a 5 inch cake. Cook for 3 to 5 minutes on each side until browned. Repeat with the remainder of the batter. Serve warm with your favorite condiments.
