Ingredients
- 2 c. fresh corn
- 3 eggs, beaten
- 2 Tbsp. milk
- 1 Tbsp. butter, melted
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. freshly ground pepper
- 1 to 1-1/4 c. flour
- Oil for frying
Instructions
- In a large bowl, mix the corn, eggs, milk, and butter together. Set aside.
- In a separate bowl, thoroughly combine the baking powder, salt, pepper, and 1 cup of the flour. Stir the dry ingredients into the corn mixture. If necessary, add just enough additional flour to hold the fritters together.
- On a griddle, heat a little oil. Drop 1/2 cup of batter onto the pan. Flatten and shape into a 5 inch cake. Cook for 3 to 5 minutes on each side until browned. Repeat with the remainder of the batter. Serve warm with your favorite condiments.
